  • 1 1/2 teaspoons baking powder
  • 1/2 teaspoon ground cinnamon
  • 1/4 teaspoon salt
  • 2 tablespoons (25g) coconut sugar or brown sugar
  • 1/4 cup (60g) plain Greek yogurt (or dairy-free yogurt)
  • 1/4 cup (60ml) unsweetened applesauce
  • 1 large egg, room temperature
  • 1 teaspoon pure vanilla extract
  • 1 tablespoon (15ml) milk of choice (dairy or non-dairy)
  • 1 large apple (about 1 cup, 130g), peeled, cored, and finely diced (Honeycrisp, Granny Smith, or Fuji)
  • 1/2 teaspoon lemon juice
  • For the glaze (optional):
  • 1/3 cup (40g) powdered sugar (or monk fruit sweetener)
  • 12 teaspoons milk (for desired consistency)
  • 1/4 teaspoon vanilla extract

Instructions

  1. Peel, core, and finely dice 1 large apple (about 1 cup). Toss with 1/2 teaspoon lemon juice.
  2. In a medium bowl, whisk together flour, baking powder, cinnamon, salt, and coconut sugar.
  3. In a separate bowl, whisk Greek yogurt, applesauce, egg, vanilla, and milk until smooth.
  4. Add wet ingredients to dry ingredients and stir gently until just combined. Do not overmix.
  5. Fold in the diced apples. If batter is too dry, add another tablespoon of milk.
  6. Preheat air fryer to 350°F (175°C) while preparing the batter.
  7. Line air fryer basket with parchment or liner. Scoop heaping tablespoon-sized portions of batter onto the liner, leaving space between each.
  8. Air fry at 350°F (175°C) for 8-10 minutes. Check for doneness; if needed, air fry another 2-3 minutes until golden brown and a toothpick comes out clean.
  9. Transfer bites to a cooling rack.
  10. For the glaze, whisk powdered sugar, milk, and vanilla until smooth. Drizzle or dip each bite in glaze and let set for a few minutes.
  11. Serve warm or at room temperature.

Notes

For gluten-free, use a 1:1 baking blend. For dairy-free, use coconut yogurt and non-dairy milk. Dice apples small for best texture. Don’t overcrowd the air fryer basket—cook in batches if needed. Glaze while bites are still warm for best results. Store leftovers in an airtight container at room temperature for 2 days or refrigerate up to 4 days. Freeze unglazed bites and reheat in the air fryer before glazing.
