Instructions

  1. Pour 1 cup of apple cider into a medium saucepan and simmer over medium heat until it reduces to about 1/4 cup. Let the syrup cool completely before using.
  2. Preheat your oven to 350°F (175°C) and line baking sheets with parchment paper.
  3. In a large mixing bowl, cream together the softened butter, granulated sugar, and brown sugar until light and fluffy (about 2-3 minutes).
  4. Beat in the egg, vanilla extract, and cooled apple cider syrup. Mix until fully combined.
  5. In a separate bowl, whisk together the flour, baking soda, cinnamon, nutmeg, and salt.
  6. Gradually add the dry ingredients to the wet ingredients, mixing just until combined. Be careful not to overmix.
  7. Using a cookie scoop or tablespoon, drop rounded balls of dough onto the prepared baking sheets, spacing them about 2 inches apart.
