  • 1 cup (240ml) apple cider
  • 1/4 cup (60ml) apple cider vinegar
  • 1/2 cup (100g) granulated sugar
  • 1/2 teaspoon freshly cracked black pepper
  • 1 tablespoon (14g) unsalted butter
  • Pinch of salt

Instructions

  1. In a medium saucepan, add 1/2 cup (100g) granulated sugar over medium heat. Stir occasionally until the sugar melts and turns a deep amber color, about 5-6 minutes.
  2. Slowly pour in 1/4 cup (60ml) apple cider vinegar. Stir until the bubbling subsides and the caramel is fully dissolved.
  3. Stir in 1 cup (240ml) apple cider. Bring the mixture to a simmer and let it reduce by half, about 10-12 minutes, until it thickens slightly and coats the back of a spoon.
  4. Add 1/2 teaspoon freshly cracked black pepper and a pinch of salt. Taste and adjust seasoning as needed.
  5. Remove the pan from heat and stir in 1 tablespoon (14g) unsalted butter until melted.
  6. Let the gastrique cool slightly before using. It will thicken as it cools.
