Instructions

  1. Preheat your oven to 350°F (175°C) and line a muffin tin with cupcake liners.

  3. In a separate bowl, cream the softened butter with a hand or stand mixer until light and fluffy, about 2-3 minutes.
  4. Add the sour cream, eggs, and vanilla extract to the butter mixture and mix until smooth.
  5. Gradually incorporate the dry ingredients into the wet mixture, mixing on low speed until just combined. Avoid overmixing.

  7. Divide the batter evenly among the cupcake liners, filling each about 2/3 full.
