Instructions

  1. Preheat your oven to 350°F (175°C) and grease a 9×5-inch loaf pan with butter or nonstick spray.
  2. Peel, core, and dice two medium apples (about 1 1/2 cups). Set aside.
  3. In a small bowl, combine 1/3 cup of all-purpose flour, 1/3 cup of granulated sugar, 1/2 teaspoon of cinnamon, and 1/4 cup of cold butter. Use a fork or pastry cutter to mix until crumbly. Chill in the fridge while you make the batter.
  4. In a medium bowl, whisk together 1 3/4 cups of all-purpose flour, 1 teaspoon of cinnamon, 1 teaspoon of baking powder, 1/2 teaspoon of baking soda, and a pinch of salt.
  5. In a large bowl, beat 1/2 cup of softened butter and 3/4 cup of sugar until creamy. Add two eggs, one at a time, and mix well. Stir in 1 teaspoon of vanilla extract and 1/2 cup of milk.
  6. Gradually add the dry ingredients to the wet ingredients, mixing until just combined. Gently fold in the diced apples.
  7. Pour the batter into the prepared loaf pan and sprinkle the chilled streusel topping evenly over the top.
  8. Bake for 50-60 minutes, or until a toothpick inserted into the center comes out clean. If the top browns too quickly, tent with foil during the last 15 minutes.
