- 1/4 cup (57g) cold butter (for streusel topping)
Instructions
- Preheat your oven to 350°F (175°C) and grease a 9×5-inch loaf pan with butter or nonstick spray.
- Peel, core, and dice two medium apples (about 1 1/2 cups). Set aside.
- In a small bowl, combine 1/3 cup of all-purpose flour, 1/3 cup of granulated sugar, 1/2 teaspoon of cinnamon, and 1/4 cup of cold butter. Use a fork or pastry cutter to mix until crumbly. Chill in the fridge while you make the batter.
- In a medium bowl, whisk together 1 3/4 cups of all-purpose flour, 1 teaspoon of cinnamon, 1 teaspoon of baking powder, 1/2 teaspoon of baking soda, and a pinch of salt.
- In a large bowl, beat 1/2 cup of softened butter and 3/4 cup of sugar until creamy. Add two eggs, one at a time, and mix well. Stir in 1 teaspoon of vanilla extract and 1/2 cup of milk.
- Gradually add the dry ingredients to the wet ingredients, mixing until just combined. Gently fold in the diced apples.
- Pour the batter into the prepared loaf pan and sprinkle the chilled streusel topping evenly over the top.
- Bake for 50-60 minutes, or until a toothpick inserted into the center comes out clean. If the top browns too quickly, tent with foil during the last 15 minutes.
- Let the bread cool in the pan for 10 minutes, then transfer it to a wire rack to cool completely.
Notes
For a crunchier topping, double the streusel recipe. Use room temperature ingredients for easier mixing, and avoid overmixing the batter to keep the bread fluffy.
