- 1 lb steak (sirloin, ribeye, or skirt steak)
- 12 oz fettuccine or penne pasta
- 1 cup heavy cream
- 1/2 cup freshly grated Parmesan cheese
- 3 cloves garlic, minced
- 2 tbsp butter
- 2 tbsp olive oil
- Salt, to taste
- Pepper, to taste
- 1/2 tsp paprika
- Optional: 1 cup mushrooms, sliced
- Optional: 1 cup spinach, wilted
Instructions
- Bring a large pot of salted water to a boil. Cook the pasta according to package instructions until al dente. Drain and set aside, reserving 1/2 cup of pasta water.
- Season both sides of the steak with salt, pepper, and paprika. Heat olive oil in a skillet over medium-high heat. Sear the steak for 3-4 minutes per side for medium-rare. Remove the steak from the skillet and let it rest for 5 minutes before slicing into bite-sized pieces.
- In the same skillet, lower the heat to medium. Add butter and minced garlic, cooking until fragrant (about 1 minute). Stir in the heavy cream and reserved pasta water, whisking to combine.
- Gradually add the grated Parmesan cheese, stirring until it melts into the sauce. Adjust seasoning with salt and pepper.
- Toss the cooked pasta into the sauce, ensuring it’s fully coated. Add the sliced steak and optional veggies (like mushrooms or spinach), stirring gently to combine.
- Plate the creamy steak and pasta, garnishing with fresh parsley or extra Parmesan if desired.
Notes
Reserve pasta water to adjust sauce consistency. Use fresh Parmesan for the best flavor. Avoid overcooking the steak to keep it tender.
