Description
This recipe combines the classic gooey, cheesy goodness of a grilled cheese sandwich with the irresistible flavors of a spinach and artichoke dip. It’s creamy, savory, slightly tangy, and totally worth every bite!
Ingredients
Scale
- 2 slices of sourdough bread
- 1/2 cup fresh spinach (or thawed frozen spinach, squeezed dry)
- 1/4 cup canned artichoke hearts, chopped
- 2 tablespoons cream cheese
- 1/4 cup shredded mozzarella cheese
- 1 tablespoon grated Parmesan cheese
- 1 tablespoon butter, for grilling
Instructions
- In a small bowl, mix the cream cheese, mozzarella, Parmesan, spinach, and artichoke hearts until well combined.
- Spread the mixture evenly onto one slice of sourdough bread.
- Top with the second slice of bread to form a sandwich.
- Heat a skillet over medium heat and melt the butter.
- Place the sandwich in the skillet and cook until golden brown on one side, about 3-4 minutes.
- Flip the sandwich and cook the other side until golden brown and the cheese is melted, another 3-4 minutes.
- Remove from the skillet, slice in half, and serve warm.
Notes
Pair this sandwich with a bowl of tomato soup for the ultimate cozy meal. You can use baby kale instead of spinach for an earthy twist, or roasted artichoke hearts for a smoky flavor.
