Instructions
- Prepare the streusel: In a small bowl, combine 1/3 cup all-purpose flour, 1/4 cup brown sugar, 1/4 cup rolled oats (optional), 1/4 teaspoon cinnamon, and 3 tablespoons butter. Mix until crumbly, then set aside.
- Mix the dough: In a large bowl, cream together 1/2 cup unsalted butter and 3/4 cup granulated sugar until light and fluffy. Add 1 large egg and 1 teaspoon vanilla extract, mixing well.
- Combine dry ingredients: In another bowl, whisk together 1 1/2 cups all-purpose flour, 1/2 teaspoon baking powder, and 1/4 teaspoon baking soda. Gradually add this to the wet mixture, mixing until just combined.
- Fold in blueberries: Gently fold in 1 cup fresh blueberries, being careful not to squish them.
- Shape the cookies: Scoop the dough onto a prepared baking sheet, leaving about 2 inches between each cookie. Flatten slightly with the back of a spoon.
- Add streusel topping: Sprinkle the streusel generously over each cookie.
- Bake: Preheat your oven to 350°F (175°C) and bake for 12-15 minutes, or until the edges are golden brown.
- Cool: Let the cookies cool on the baking sheet for 5 minutes, then transfer to a cooling rack.
Notes
For best results, use room-temperature eggs and softened butter. Toss frozen blueberries in flour to prevent color bleeding. Cover cookies loosely with foil if streusel browns too quickly.
