- 3 cups (450g) blueberries (fresh or frozen, do not thaw if frozen)
- 1 1/2 cups (150g) old-fashioned oats
- 1 1/2 cups (190g) all-purpose flour (or gluten-free 1:1 baking flour)
- 3/4 cup (150g) brown sugar (or coconut sugar)
- 3/4 cup (170g) cold, cubed unsalted butter
- 1/4 cup (50g) granulated sugar
- 2 tablespoons (15g) cornstarch
- 1 tablespoon (15ml) lemon juice
- 1 teaspoon vanilla extract
Instructions
- Preheat your oven to 350°F (175°C) and line a 9×13 baking dish with parchment paper.
- In a mixing bowl, combine oats, flour, brown sugar, and cold butter. Use a pastry cutter or fork to blend until the mixture is crumbly and holds together when pressed.
- Press two-thirds of the crumble mixture firmly into the bottom of the prepared pan. Bake for 12-15 minutes or until lightly golden.
- In another bowl, toss blueberries with granulated sugar, cornstarch, and lemon juice. Spread this mixture evenly over the baked crust.
- Sprinkle the remaining crumble mixture over the blueberries, gently pressing it down.
- Return the pan to the oven and bake for 30-35 minutes, or until the top is golden and the blueberries are bubbling.
- Let the bars cool completely in the pan before slicing into squares.
Notes
For the best crumble texture, use cold butter. If using frozen blueberries, do not thaw them before mixing. Let the bars cool completely before slicing for clean cuts.
