Instructions
- Preheat the oven to 400°F (200°C). Line a baking sheet with parchment paper.
- Wash the zucchini thoroughly and pat dry. Slice them lengthwise into ½-inch thick steaks. Place them on the prepared baking sheet.
- In a small bowl, combine olive oil, minced garlic, paprika, salt, and pepper. Stir well.
- Use a pastry brush to evenly coat each zucchini steak with the garlic mixture, including the edges.
- Roast the zucchini in the oven for 15 minutes, until they start softening but are not mushy.
- Remove the zucchini from the oven and sprinkle shredded mozzarella and grated Parmesan over each steak.
- Switch the oven to broil and cook the zucchini for 3-5 minutes, or until the cheese is bubbly and golden brown.
- Transfer the cheesy garlic zucchini steaks to a serving platter, garnish with chopped parsley if desired, and serve warm.

For best results, avoid overcrowding the pan to ensure even roasting. Keep a close eye during the broiling stage to prevent the cheese from burning.
