Ingredients
- 16 oz (450 g) cremini or button mushrooms, cleaned and sliced thick
- 2 tbsp (28 g) unsalted butter, divided
- 1 tbsp (15 ml) olive oil
- 3 cloves garlic, minced
- 1 1/2 tbsp (22 ml) Worcestershire sauce
- 1 tsp (1 g) fresh thyme leaves (or 1/2 tsp dried thyme)
- 1/2 tsp (2 g) smoked paprika (optional)
- 1/2 tsp (3 g) salt, or to taste
- 1/4 tsp (1 g) freshly ground black pepper
- 2 tbsp (8 g) fresh parsley, chopped (optional, for garnish)
Instructions
- Clean mushrooms by wiping with a damp cloth (avoid soaking). Slice thick, about 1/2 inch.
- Heat 1 tbsp butter and olive oil in a large skillet over medium-high heat until butter foams.
- Add mushrooms in a single layer. Let sit undisturbed for 3-4 minutes until browned on one side.
- Flip mushrooms, season with a pinch of salt and pepper, and add remaining 1 tbsp butter. Cook another 4-5 minutes, stirring occasionally, until deep golden and glossy.
- Stir in minced garlic and thyme. Sauté for 1 minute, adding smoked paprika if using.
- Pour in Worcestershire sauce, scraping up browned bits. Let bubble for 1-2 minutes to reduce slightly. Taste and adjust seasoning.
- Remove from heat, garnish with chopped parsley, and serve immediately.
Notes
For best caramelization, don’t crowd the pan and let mushrooms brown undisturbed before stirring. Use gluten-free Worcestershire for a gluten-free version. Add a splash of white wine or broth for extra depth. Mushrooms can be made ahead and reheated in a skillet.
