Cozy Apple Cheddar Soup Recipe – Easy Comfort Food

  • Author: David
  • Total Time: 45 minutes
  • Yield: 4 servings 1x

Description

A warm and creamy soup combining sweet apples and tangy cheddar cheese, perfect for chilly fall evenings or a comforting meal.

Ingredients

Scale
  • 3 cups apples, peeled, cored, and diced (Granny Smith or Honeycrisp recommended)
  • 1 medium onion, finely chopped
  • 3 cloves garlic, minced
  • 3 tablespoons unsalted butter
  • 4 cups chicken or vegetable broth (low sodium recommended)
  • 1 cup heavy cream (or substitute with half-and-half or non-dairy cream alternative)
  • 2 cups shredded cheddar cheese (sharp cheddar recommended)
  • 2 tablespoons flour
  • ½ teaspoon salt (adjust to taste)
  • ¼ teaspoon black pepper (freshly ground)
  • ¼ teaspoon nutmeg (optional)

Instructions

  1. Peel, core, and dice the apples. Finely chop the onion and mince the garlic.
  2. Heat a large Dutch oven or soup pot over medium heat. Add the butter and let it melt until slightly foamy.
  3. Add the chopped onion to the pot and sauté for 4-5 minutes, until softened and translucent. Stir occasionally to prevent burning.
  4. Add the minced garlic and cook for another 1 minute, until fragrant. Be careful not to let it burn.
  5. Sprinkle the flour over the onions and garlic, stirring constantly to create a roux. Cook for 1-2 minutes to remove the raw flour taste.
  6. Slowly pour in the chicken or vegetable broth, whisking as you go to prevent lumps. Bring the mixture to a gentle simmer.
  7. Add the diced apples to the pot and simmer for 15-20 minutes, or until the apples are soft and tender.
  8. Remove the pot from heat and use an immersion blender to puree the soup until smooth. If using a regular blender, let the soup cool slightly before blending in batches.
  9. Return the soup to the pot and stir in the heavy cream, shredded cheddar cheese, salt, black pepper, and nutmeg. Heat gently until the cheese is fully melted and incorporated.
  10. Taste and adjust seasoning as needed. Serve immediately with your favorite toppings.

Notes

Choose tart apples like Granny Smith or Honeycrisp for the best flavor balance. Grate your own cheese for smoother melting. Adjust seasoning gradually after adding cheese.
