Instructions
- Pour 1 ½ cups of apple cider into a small saucepan and simmer over medium heat until it reduces to about ¾ cup. Let it cool completely before using.
- Preheat the oven to 375°F (190°C). Line a muffin tin with paper liners or lightly grease them.
- In a large bowl, whisk together the flour, granulated sugar, brown sugar, baking powder, baking soda, salt, cinnamon, and nutmeg.
- In a medium bowl, whisk the cooled apple cider, eggs, melted butter, and vanilla extract until smooth.
- Gradually pour the wet ingredients into the dry ingredients, folding gently with a spatula until just combined. Do not overmix.
- Divide the batter evenly among the muffin cups, filling each about ¾ full.
- Sprinkle the cinnamon sugar mixture generously over each muffin.
- Bake for 18-20 minutes, or until a toothpick inserted into the center comes out clean.
- Allow the muffins to cool in the pan for 5 minutes before transferring them to a wire rack to cool completely.
