Description

These Cozy Apple Cider Muffins with Cinnamon Sugar are the ultimate treat for chilly mornings or afternoons, featuring a sweet apple cider reduction and a buttery cinnamon sugar topping.

Ingredients

Scale
  • 1 ½ cups apple cider (reduced to ¾ cup)
  • 2 cups all-purpose flour
  • ¾ cup granulated sugar
  • ¼ cup brown sugar
  • 2 teaspoons baking powder
  • ½ teaspoon baking soda
  • ½ teaspoon salt
  • 1 teaspoon ground cinnamon
  • ¼ teaspoon ground nutmeg (optional)
  • 2 large eggs, room temperature
  • ½ cup unsalted butter, melted and cooled
  • 1 teaspoon vanilla extract
  • ¼ cup granulated sugar mixed with 1 teaspoon ground cinnamon (for topping)

Instructions

  1. Pour 1 ½ cups of apple cider into a small saucepan and simmer over medium heat until it reduces to about ¾ cup. Let it cool completely before using.
  2. Preheat the oven to 375°F (190°C). Line a muffin tin with paper liners or lightly grease them.
  3. In a large bowl, whisk together the flour, granulated sugar, brown sugar, baking powder, baking soda, salt, cinnamon, and nutmeg.
  4. In a medium bowl, whisk the cooled apple cider, eggs, melted butter, and vanilla extract until smooth.
  5. Gradually pour the wet ingredients into the dry ingredients, folding gently with a spatula until just combined. Do not overmix.
  6. Divide the batter evenly among the muffin cups, filling each about ¾ full.
  7. Sprinkle the cinnamon sugar mixture generously over each muffin.
  8. Bake for 18-20 minutes, or until a toothpick inserted into the center comes out clean.
  9. Allow the muffins to cool in the pan for 5 minutes before transferring them to a wire rack to cool completely.

Notes

[‘Reduce the apple cider to concentrate its flavor.’, ‘Use room temperature eggs and butter for smoother batter.’, ‘Do not overmix the batter to avoid dense muffins.’, ‘Check for doneness with a toothpick.’]
