  • 1 pound ground Italian sausage
  • 1 medium yellow onion, diced
  • 3 cloves minced garlic
  • 56 ounces crushed tomatoes (2 cans, 28 ounces each)
  • 2 tablespoons tomato paste
  • 6 cups chicken or vegetable broth
  • 2 teaspoons Italian seasoning
  • 8 ounces lasagna noodles, broken into bite-sized pieces
  • 1 cup shredded mozzarella cheese
  • ½ cup grated Parmesan cheese
  • Ricotta cheese for topping
  • Fresh basil (optional)
  • Salt and pepper to taste

Instructions

  1. Heat a large skillet over medium-high heat. Add the ground Italian sausage and cook until browned, breaking it into crumbles with a wooden spoon. Remove and drain excess grease.
  2. In the same skillet, add the diced onion and cook until softened (about 3-4 minutes). Add minced garlic and sauté for another minute, until fragrant.
  3. Transfer the browned sausage, onion, and garlic to your Crock Pot. Add the crushed tomatoes, tomato paste, chicken broth, Italian seasoning, salt, and pepper. Stir to combine.
  4. Cover and cook on low for 6-8 hours, or on high for 3-4 hours. Stir occasionally if you’re home, but it’s not necessary.
  5. About 30 minutes before serving, break the lasagna noodles into small pieces and add them to the pot. Stir well and cook until tender.
  6. While the noodles cook, shred the mozzarella, grate the Parmesan, and chop fresh basil if using.
  7. Ladle the soup into bowls and top with a dollop of ricotta, shredded mozzarella, grated Parmesan, and a sprinkle of fresh basil. Serve hot and enjoy!
