- 1 pound (450 g) fresh spinach, washed and stems removed
- 2 tablespoons (30 g) unsalted butter
- 3 cloves garlic, minced
- 1 small shallot, finely diced (optional)
- 4 ounces (115 g) cream cheese, softened
- 3/4 cup (180 ml) heavy cream
- 1/2 cup (50 g) grated Parmesan cheese
- 1/8 teaspoon nutmeg
- Salt and pepper, to taste
- Optional: pinch of crushed red pepper or sprinkle of mozzarella cheese
Instructions
- Wash the spinach thoroughly and remove any tough stems. If using frozen spinach, thaw completely and squeeze out all moisture.
- In a large skillet, melt butter over medium heat. Add minced garlic and shallot, cooking for 1–2 minutes until fragrant but not browned.
- Add spinach in batches, stirring gently as it wilts, about 3–4 minutes. Transfer wilted spinach to a colander and drain any excess liquid.
- Reduce heat to low. Add cream cheese and heavy cream to the skillet, stirring until smooth and creamy.
- Stir in Parmesan cheese, nutmeg, salt, and pepper. Taste and adjust seasoning as needed.
- Return the drained spinach to the skillet and fold it into the sauce. Simmer gently for 2–3 minutes until well combined.
- Optional: Sprinkle extra Parmesan on top and let it melt before serving.
Notes
Dry spinach thoroughly before cooking to prevent a watery sauce. Cook the cream base over low heat to avoid curdling. For extra flavor, add a pinch of nutmeg or top with crispy bacon bits. Leftovers can be refrigerated for up to 3 days or frozen for up to 2 months.
