Ingredients

  • 1 ripe avocado
  • 1/2 cup (120 ml) buttermilk
  • 1 tablespoon (15 ml) freshly squeezed lemon juice
  • 2 tablespoons (8 g) chopped dill
  • 2 tablespoons (8 g) chopped parsley
  • 1 tablespoon (4 g) chopped chives
  • 1 clove garlic
  • 1/2 teaspoon (2.8 g) salt
  • 1/4 teaspoon (0.6 g) black pepper

Instructions

  1. Cut the avocado in half, remove the pit, and scoop out the flesh into your blender or food processor.
  2. Pour in 1/2 cup (120 ml) of buttermilk and 1 tablespoon (15 ml) of freshly squeezed lemon juice.
  3. Toss in 2 tablespoons (8 g) each of chopped dill and parsley, 1 tablespoon (4 g) of chopped chives, and a clove of garlic.
  4. Sprinkle in 1/2 teaspoon (2.8 g) of salt and 1/4 teaspoon (0.6 g) of black pepper.
  5. Process everything until smooth and creamy, stopping to scrape down the sides as needed. If the mixture is too thick, add an extra splash of buttermilk.
  6. Taste the dressing and adjust the seasoning or acidity with extra salt or lemon juice, if desired.
  7. Transfer the dressing to a container and refrigerate for at least 30 minutes to allow the flavors to meld together.

Notes

For a thicker dip, reduce the buttermilk slightly. For a thinner dressing, add a splash more. Chill for at least 30 minutes to deepen the flavors.
