- 1 ripe avocado
- 1/2 cup (120 ml) buttermilk
- 1 tablespoon (15 ml) freshly squeezed lemon juice
- 2 tablespoons (8 g) chopped dill
- 2 tablespoons (8 g) chopped parsley
- 1 tablespoon (4 g) chopped chives
- 1 clove garlic
- 1/2 teaspoon (2.8 g) salt
- 1/4 teaspoon (0.6 g) black pepper
Instructions
- Cut the avocado in half, remove the pit, and scoop out the flesh into your blender or food processor.
- Pour in 1/2 cup (120 ml) of buttermilk and 1 tablespoon (15 ml) of freshly squeezed lemon juice.
- Toss in 2 tablespoons (8 g) each of chopped dill and parsley, 1 tablespoon (4 g) of chopped chives, and a clove of garlic.
- Sprinkle in 1/2 teaspoon (2.8 g) of salt and 1/4 teaspoon (0.6 g) of black pepper.
- Process everything until smooth and creamy, stopping to scrape down the sides as needed. If the mixture is too thick, add an extra splash of buttermilk.
- Taste the dressing and adjust the seasoning or acidity with extra salt or lemon juice, if desired.
- Transfer the dressing to a container and refrigerate for at least 30 minutes to allow the flavors to meld together.
Notes
For a thicker dip, reduce the buttermilk slightly. For a thinner dressing, add a splash more. Chill for at least 30 minutes to deepen the flavors.
