Ingredients

  • 1 cup (200g) orzo pasta
  • 2 pre-cooked chicken sausages, sliced (garlic and herb-flavored recommended)
  • 1 tablespoon olive oil
  • 3 garlic cloves, minced
  • 2 cups (475ml) chicken broth
  • 1/2 cup (120ml) heavy cream
  • 1/3 cup (30g) freshly grated Parmesan cheese
  • 2 cups (60g) fresh spinach
  • Salt and pepper to taste

Instructions

  1. Heat 1 tablespoon of olive oil in a large skillet over medium heat. Add the sliced chicken sausage and cook until browned, about 3-4 minutes. Remove and set aside.
  2. In the same skillet, add another drizzle of olive oil if needed. Sauté 3 minced garlic cloves until fragrant, about 30 seconds. Be careful not to burn the garlic.
  3. Add 1 cup (200g) of orzo to the skillet and stir to coat it in the oil and garlic. Toast for 1-2 minutes until lightly golden.
  4. Pour in 2 cups (475ml) of chicken broth and bring to a gentle simmer. Stir occasionally to prevent sticking.
  5. Let the orzo cook for 8-10 minutes, stirring occasionally, until most of the liquid is absorbed.
  6. Stir in 1/2 cup (120ml) of heavy cream and 1/3 cup (30g) of grated Parmesan cheese. Mix until the sauce thickens slightly.
  7. Toss in 2 cups (60g) of fresh spinach and the cooked chicken sausage. Stir until the spinach wilts and everything is well combined.
  8. Taste and adjust with salt and pepper as needed. Serve hot and enjoy!

Notes

For best results, use freshly grated Parmesan cheese and avoid overcooking the orzo. Adjust the sauce thickness by adding more chicken broth if needed.
