Description

Ingredients

  • 1 pound medium-sized shrimp, peeled and deveined
  • 12 ounces linguine
  • 4 tablespoons unsalted butter, divided
  • 4 cloves garlic, minced
  • 1/2 cup white wine (or chicken broth)
  • 1 cup heavy cream
  • 1/2 cup freshly grated Parmesan cheese
  • 2 tablespoons fresh parsley, chopped
  • 1/4 teaspoon red pepper flakes (optional)
  • Salt and pepper to taste

Instructions

  1. Bring a large pot of salted water to a boil and cook the linguine according to the package directions until al dente. Reserve 1 cup of pasta water before draining.
  2. In a large skillet, melt 2 tablespoons of butter over medium heat. Add the shrimp in a single layer and cook for 1-2 minutes per side, until pink and slightly curled. Remove and set aside.
  3. In the same skillet, add 2 more tablespoons of butter and the minced garlic. Sauté for about 1 minute until fragrant. Pour in the white wine (or chicken broth) and let it simmer for 2-3 minutes, reducing slightly.
  4. Lower the heat and stir in the heavy cream. Let it warm through and thicken slightly, about 3-4 minutes. Stir in the grated Parmesan cheese until melted and smooth.
  5. Add the drained linguine to the skillet and toss to coat in the sauce. If needed, use reserved pasta water to loosen the sauce.
  6. Return the shrimp to the skillet and toss gently with the pasta. Sprinkle with chopped parsley and red pepper flakes (if using).
  7. Plate the pasta and shrimp, and serve hot with extra Parmesan cheese on the side.

Notes

For a lighter version, use half-and-half instead of heavy cream. Adjust the sauce consistency with reserved pasta water as needed. Freshly grated Parmesan is recommended for the best flavor.
