- 1 pound medium-sized shrimp, peeled and deveined
- 12 ounces linguine
- 4 tablespoons unsalted butter, divided
- 4 cloves garlic, minced
- 1/2 cup white wine (or chicken broth)
- 1 cup heavy cream
- 1/2 cup freshly grated Parmesan cheese
- 2 tablespoons fresh parsley, chopped
- 1/4 teaspoon red pepper flakes (optional)
- Salt and pepper to taste
Instructions
- Bring a large pot of salted water to a boil and cook the linguine according to the package directions until al dente. Reserve 1 cup of pasta water before draining.
- In a large skillet, melt 2 tablespoons of butter over medium heat. Add the shrimp in a single layer and cook for 1-2 minutes per side, until pink and slightly curled. Remove and set aside.
- In the same skillet, add 2 more tablespoons of butter and the minced garlic. Sauté for about 1 minute until fragrant. Pour in the white wine (or chicken broth) and let it simmer for 2-3 minutes, reducing slightly.
- Lower the heat and stir in the heavy cream. Let it warm through and thicken slightly, about 3-4 minutes. Stir in the grated Parmesan cheese until melted and smooth.
- Add the drained linguine to the skillet and toss to coat in the sauce. If needed, use reserved pasta water to loosen the sauce.
- Return the shrimp to the skillet and toss gently with the pasta. Sprinkle with chopped parsley and red pepper flakes (if using).
- Plate the pasta and shrimp, and serve hot with extra Parmesan cheese on the side.
Notes
For a lighter version, use half-and-half instead of heavy cream. Adjust the sauce consistency with reserved pasta water as needed. Freshly grated Parmesan is recommended for the best flavor.
