- 2 lbs (about 4 large) Russet or Yukon Gold potatoes, peeled and quartered
- 4 oz cream cheese, softened
- 1/4 cup (1/2 stick) unsalted butter
- 1/2 cup warm milk
- 1 tsp salt
- 1/2 tsp freshly ground black pepper
- 1–2 cloves garlic, minced or roasted (optional)
- Chopped chives or parsley for garnish (optional)
Instructions
- Peel and cut the potatoes into equal-sized chunks.
- Place potatoes in a large pot, cover with cold water, and add a pinch of salt. Bring to a boil over medium-high heat and cook for 15–20 minutes until fork-tender.
- Drain the potatoes in a colander and let them sit for a few minutes to steam dry.
- Return potatoes to the pot and mash using a potato masher or ricer until smooth.
- Add butter and softened cream cheese. Stir until melted and creamy.
- Gradually add warm milk while stirring until desired consistency is reached.
- Season with salt and pepper to taste.
- Optional: Stir in garlic or sprinkle with fresh herbs before serving.
- Serve warm with a pat of butter or garnish of choice.
Notes
For extra flavor, add roasted garlic or Parmesan cheese. To keep warm, store in a slow cooker on low for up to 2 hours. Reheat leftovers with a splash of milk to restore creaminess.
