Ingredients

  • 8 ounces fettuccine or linguine
  • 2 tablespoons olive oil
  • 4 cloves garlic, minced
  • 8 ounces oyster mushrooms, cleaned and sliced
  • 1 teaspoon dried thyme
  • Salt, to taste
  • Pepper, to taste
  • 1 cup heavy cream
  • 1/2 cup freshly grated Parmesan cheese
  • Optional: Red pepper flakes, for a subtle kick
  • Optional: Fresh thyme or parsley, for garnish

Instructions

  1. Bring a large pot of salted water to a boil. Cook pasta according to package instructions until al dente (about 8-10 minutes). Reserve 1 cup of pasta water, then drain and set aside.
  2. Heat 2 tablespoons of olive oil in a large sauté pan over medium heat. Add minced garlic and cook for about 30 seconds, stirring constantly, until fragrant.
  3. Add oyster mushrooms to the pan. Sauté for 5-7 minutes, or until they release their moisture and start to brown slightly. Sprinkle in dried thyme and season with salt and pepper.
  4. Reduce heat to low and pour in heavy cream. Stir gently to combine, then let the sauce simmer for 3-4 minutes. If it’s too thick, add a splash of reserved pasta water to loosen it up.
  5. Stir in grated Parmesan cheese, allowing it to melt into the sauce. Taste and adjust seasonings as needed.
  6. Add cooked pasta to the pan, tossing to coat evenly with the sauce. If needed, add more pasta water to achieve desired consistency.
  7. Serve immediately, garnished with additional Parmesan and a sprinkle of fresh thyme or parsley.

Notes

Let the mushrooms cook until golden brown for maximum flavor. Reserve pasta water to adjust sauce consistency. Use fresh garlic and Parmesan for the best taste.
