Ingredients

  • 1 cup Arborio rice
  • 1 pound medium-sized shrimp, peeled and deveined
  • 4 cups chicken or seafood stock, warmed
  • 1/2 cup dry white wine
  • 2 tablespoons olive oil
  • 2 tablespoons unsalted butter
  • 1/2 cup freshly grated Parmesan cheese
  • 1 small onion, finely chopped
  • 2 cloves garlic, minced
  • Salt and pepper to taste
  • 2 tablespoons parsley, chopped

Instructions

  1. Heat the stock in a saucepan over medium heat, keeping it warm throughout the cooking process.
  2. In a large skillet, heat 1 tablespoon of olive oil over medium heat. Add the shrimp, season with salt and pepper, and cook for 2-3 minutes per side until pink and cooked through. Remove to a small bowl and set aside.
  3. In the same skillet, add another tablespoon of olive oil and sauté the chopped onion until softened, about 3 minutes. Add the minced garlic and cook for 1 minute, stirring often to prevent burning.
  4. Add the Arborio rice to the skillet and stir to coat the grains in the oil. Cook for 2 minutes to toast the rice slightly.
  5. Pour in the white wine and cook until it’s mostly absorbed, stirring occasionally.
  6. Begin adding the warm stock, one ladleful at a time, stirring frequently and waiting for the liquid to be absorbed before adding more. This process will take about 20 minutes. The rice should be creamy and just tender to the bite when done.
  7. Lower the heat and stir in the butter, Parmesan cheese, and cooked shrimp. Mix until everything is combined and creamy.
  8. Season with additional salt and pepper to taste, and garnish with chopped parsley before serving.
