A rich and creamy pasta dish featuring tender shrimp, sun-dried tomatoes, and fresh spinach in a garlicky cream sauce. Perfect for cozy dinners or special occasions.

- 1 lb medium to large shrimp, peeled and deveined
- 12 oz fettuccine or linguine pasta
- 4 cloves garlic, minced
- 1 cup heavy cream
- 1/2 cup freshly grated Parmesan cheese
- 1/3 cup sun-dried tomatoes, packed in oil, chopped
- 2 cups fresh spinach
- 2 tbsp olive oil
- 1 tbsp butter
- 1 tsp Italian seasoning
- Salt and pepper to taste
- Pinch of red pepper flakes (optional)
Instructions
- Bring a large pot of salted water to a boil. Add pasta and cook according to package instructions until al dente. Reserve 1 cup of pasta water, then drain.
- Pat shrimp dry with paper towels and season with salt, pepper, and a pinch of Italian seasoning.
- Heat 2 tablespoons of olive oil in a large skillet over medium-high heat. Add shrimp and cook for 2-3 minutes per side until pink and opaque. Remove shrimp and set aside.
- In the same skillet, add 1 tablespoon of butter and sauté garlic for 1-2 minutes until fragrant. Stir in sun-dried tomatoes and cook for another minute.
- Pour in heavy cream and bring to a gentle simmer. Stir in Parmesan cheese until melted and smooth. If the sauce is too thick, thin it out with reserved pasta water, one tablespoon at a time.
- Add fresh spinach and cook until wilted, about 2 minutes.
- Add cooked pasta and shrimp to the skillet. Toss everything together until pasta is fully coated in the sauce.
- Season with additional salt, pepper, or red pepper flakes to taste. Serve immediately with extra Parmesan cheese on top.
Notes
For best results, use freshly grated Parmesan cheese and avoid overcooking the shrimp. Reserve pasta water to adjust the sauce consistency as needed.
