Description

Soft pillows of gnocchi nestled in a rich and velvety cream sauce, studded with garlic, sun-dried tomatoes, spinach, and Parmesan cheese. Perfect for a cozy lunch or dinner inspired by Tuscan flavors.


Ingredients

  • 1 pound (450 g) fresh gnocchi
  • 1 cup (240 ml) heavy cream
  • 2 cloves garlic, minced
  • 1/2 cup (120 ml) chicken broth (or vegetable broth for vegetarian)
  • 1/2 cup (50 g) grated Parmesan cheese
  • 1/2 cup (75 g) sun-dried tomatoes, chopped
  • 2 cups (60 g) fresh baby spinach
  • 1 tablespoon olive oil
  • Salt, to taste
  • Pepper, to taste
  • Pinch of Italian seasoning
  • Optional: Crushed red pepper for heat

Instructions

  1. Mince the garlic, chop the sun-dried tomatoes, and wash the spinach thoroughly. Grate the Parmesan cheese and set it aside.
  2. Bring a large pot of salted water to a boil. Add the gnocchi and cook for 2-3 minutes, or until they float to the surface. Drain and set aside.
  3. Heat 1 tablespoon of olive oil in a large skillet over medium heat. Add the minced garlic and cook until fragrant, about 1 minute.
  4. Stir in the chopped sun-dried tomatoes and cook for another minute.
  5. Pour in 1 cup (240 ml) of heavy cream and 1/2 cup (120 ml) of chicken broth. Stir well and bring to a gentle simmer.
  6. Add the spinach and let it wilt into the sauce, stirring occasionally.
  7. Add the cooked gnocchi to the skillet and gently stir to coat them in the sauce.
  8. Sprinkle 1/2 cup (50 g) of grated Parmesan over the dish and stir until melted and creamy.
  9. Season with salt, pepper, and a pinch of Italian seasoning. Taste and adjust as needed.
  10. Serve immediately while the sauce is hot and creamy.

Notes

For extra flavor, toss the gnocchi in a little butter before adding them to the sauce. Use low heat for the cream sauce to prevent separation.
