- 1 pound (450 g) fresh gnocchi
- 1 cup (240 ml) heavy cream
- 2 cloves garlic, minced
- 1/2 cup (120 ml) chicken broth (or vegetable broth for vegetarian)
- 1/2 cup (50 g) grated Parmesan cheese
- 1/2 cup (75 g) sun-dried tomatoes, chopped
- 2 cups (60 g) fresh baby spinach
- 1 tablespoon olive oil
- Salt, to taste
- Pepper, to taste
- Pinch of Italian seasoning
- Optional: Crushed red pepper for heat
Instructions
- Mince the garlic, chop the sun-dried tomatoes, and wash the spinach thoroughly. Grate the Parmesan cheese and set it aside.
- Bring a large pot of salted water to a boil. Add the gnocchi and cook for 2-3 minutes, or until they float to the surface. Drain and set aside.
- Heat 1 tablespoon of olive oil in a large skillet over medium heat. Add the minced garlic and cook until fragrant, about 1 minute.
- Stir in the chopped sun-dried tomatoes and cook for another minute.
- Pour in 1 cup (240 ml) of heavy cream and 1/2 cup (120 ml) of chicken broth. Stir well and bring to a gentle simmer.
- Add the spinach and let it wilt into the sauce, stirring occasionally.
- Add the cooked gnocchi to the skillet and gently stir to coat them in the sauce.
- Sprinkle 1/2 cup (50 g) of grated Parmesan over the dish and stir until melted and creamy.
- Season with salt, pepper, and a pinch of Italian seasoning. Taste and adjust as needed.
- Serve immediately while the sauce is hot and creamy.
Notes
For extra flavor, toss the gnocchi in a little butter before adding them to the sauce. Use low heat for the cream sauce to prevent separation.
