- 1 ½ cups (150g) crushed graham crackers
- 6 tablespoons (85g) melted butter
- 2 tablespoons (25g) sugar
- 24 ounces (680g) softened cream cheese
- 1 cup (200g) sugar
- 3 large eggs
- 1 teaspoon (5ml) vanilla extract
- ½ cup (120ml) heavy cream
- 3 tablespoons (45g) sugar for topping
Instructions
- Prepare the crust: In a mixing bowl, combine crushed graham crackers, melted butter, and sugar. Press the mixture into the bottom of a springform pan and bake at 325°F (160°C) for 10 minutes. Let cool.
- Make the filling: Beat softened cream cheese with sugar until smooth. Add eggs one at a time, mixing after each addition. Stir in vanilla extract and heavy cream.
- Bake the cheesecake: Pour the filling over the crust. Place the pan in a water bath and bake at 325°F (160°C) for 60-70 minutes, or until the center is slightly jiggly.
- Cool and chill: Let the cheesecake cool at room temperature for 1 hour, then refrigerate for at least 4 hours or overnight.
- Crème brûlée topping: Sprinkle sugar evenly over the chilled cheesecake. Use a kitchen torch to caramelize the sugar until golden and crisp. If using a broiler, keep the cheesecake chilled until ready to serve.
Notes
Avoid overmixing the eggs to prevent cracks. Use a water bath for even baking. Keep the flame moving when torching the sugar to avoid burning.
