Description
Tender asparagus spears coated in a golden, crispy layer of parmesan and breadcrumbs, baked to perfection for a quick and flavorful side dish ready in just 20 minutes.
Ingredients
Scale
- 1 pound fresh asparagus spears, trimmed
- 1/2 cup grated parmesan cheese
- 1/3 cup breadcrumbs (panko or regular)
- 2 tablespoons olive oil
- 1/4 teaspoon garlic powder
- Salt and freshly cracked black pepper, to taste
- Optional: lemon zest or juice for serving
Instructions
- Preheat oven to 400°F (200°C). Line a baking sheet with parchment paper or lightly grease with olive oil.
- Trim about 1 inch from the ends of the asparagus to remove tough parts. Rinse and pat dry completely.
- In a mixing bowl, combine olive oil, garlic powder, salt, and pepper. Toss asparagus until evenly coated.
- In a separate bowl, mix grated parmesan and breadcrumbs together.
- Roll each asparagus spear in the breadcrumb mixture, pressing lightly to help it adhere.
- Arrange coated spears in a single layer on the prepared baking sheet, leaving space between each.
- Bake for 12–15 minutes, flipping halfway through, until golden brown and tender.
- Optional: sprinkle with lemon zest or a squeeze of lemon juice before serving.
- Serve immediately while hot and crispy.
Notes
For extra crunch, mix a teaspoon of cornmeal into the breadcrumb mixture. Use fresh parmesan for best texture. To make gluten-free, substitute breadcrumbs with almond flour or gluten-free panko. Air fryer option: cook at 375°F for 8–10 minutes, shaking halfway through.
