  • 2 tablespoons olive oil
  • ½ teaspoon kosher salt
  • ¼ teaspoon black pepper
  • 6 strips thick-cut bacon, chopped into small pieces
  • 2 tablespoons pure maple syrup
  • 1 tablespoon balsamic vinegar
  • 1 teaspoon Dijon mustard (optional)
  • ¼ cup chopped pecans or walnuts (optional)
  • ¼ cup dried cranberries (optional)
  • Parmesan cheese for serving (optional)

Instructions

  1. Preheat oven to 400°F (200°C).
  2. Rinse, trim, and halve the Brussels sprouts. Keep any loose leaves.
  3. In a large bowl, toss Brussels sprouts with olive oil, salt, and pepper until evenly coated.
  4. Spread sprouts cut-side down on a large baking sheet lined with parchment paper.
  5. Scatter chopped bacon evenly over the sprouts.
  6. Roast for 20 minutes, then flip the sprouts using tongs. Roast another 10–15 minutes until golden and crisp.
  7. While roasting, whisk together maple syrup, balsamic vinegar, and Dijon mustard in a small bowl to make the glaze.
  8. Transfer roasted sprouts and bacon to a serving bowl. Drizzle with the glaze and toss gently to coat.
  9. Add optional toppings like chopped nuts, dried cranberries, or Parmesan cheese before serving.

Notes

For best results, dry the Brussels sprouts thoroughly before roasting to ensure crispiness. Place them cut-side down for perfect caramelization. If making ahead, trim and halve the sprouts a day in advance and store in the fridge until ready to roast.
