- 1 ½ pounds fresh Brussels sprouts, trimmed and halved
- 2 tablespoons olive oil
- ½ teaspoon kosher salt
- ¼ teaspoon black pepper
- 6 strips thick-cut bacon, chopped into small pieces
- 2 tablespoons pure maple syrup
- 1 tablespoon balsamic vinegar
- 1 teaspoon Dijon mustard (optional)
- ¼ cup chopped pecans or walnuts (optional)
- ¼ cup dried cranberries (optional)
- Parmesan cheese for serving (optional)
Instructions
- Preheat oven to 400°F (200°C).
- Rinse, trim, and halve the Brussels sprouts. Keep any loose leaves.
- In a large bowl, toss Brussels sprouts with olive oil, salt, and pepper until evenly coated.
- Spread sprouts cut-side down on a large baking sheet lined with parchment paper.
- Scatter chopped bacon evenly over the sprouts.
- Roast for 20 minutes, then flip the sprouts using tongs. Roast another 10–15 minutes until golden and crisp.
- While roasting, whisk together maple syrup, balsamic vinegar, and Dijon mustard in a small bowl to make the glaze.
- Transfer roasted sprouts and bacon to a serving bowl. Drizzle with the glaze and toss gently to coat.
- Add optional toppings like chopped nuts, dried cranberries, or Parmesan cheese before serving.
Notes
For best results, dry the Brussels sprouts thoroughly before roasting to ensure crispiness. Place them cut-side down for perfect caramelization. If making ahead, trim and halve the sprouts a day in advance and store in the fridge until ready to roast.
