  • Author: David
  • Total Time: 6 hours 15 minutes (low) or 3 hours 15 minutes (high)
  • Yield: 6 servings 1x

Description

This crockpot creamy chicken and potato soup is a rich, comforting dish packed with tender chicken, hearty potatoes, and a velvety broth. Perfect for cozy family dinners or easy weeknight meals.

Ingredients

Scale
  • 2 boneless, skinless chicken breasts or thighs
  • 4 cups Russet or Yukon Gold potatoes, peeled and diced
  • 2 cups carrots, sliced into thin rounds
  • 1 cup celery, chopped
  • 1 cup onion, finely diced
  • 2 cloves garlic, minced
  • 4 cups chicken broth
  • 1 cup heavy cream (or half-and-half)
  • 2 tablespoons flour (or gluten-free flour)
  • 2 tablespoons butter
  • Salt and pepper to taste
  • Fresh thyme or parsley for garnish (optional)

Instructions

  1. Peel and dice the potatoes, slice the carrots, chop the celery, dice the onion, and mince the garlic.
  2. Place the chicken breasts in the bottom of the crockpot. Add the potatoes, carrots, celery, onion, and garlic on top.
  3. Pour the chicken broth over the ingredients, ensuring everything is submerged. Add a pinch of salt and pepper.
  4. Cover and cook on low for 6-8 hours or high for 3-4 hours, until the chicken is cooked through and the vegetables are tender.
  5. Remove the chicken from the crockpot and shred it using two forks. Return the shredded chicken to the pot.
  6. In a small saucepan, melt the butter over medium heat. Whisk in the flour to create a roux, cooking for 1-2 minutes until golden.
  7. Slowly whisk in the heavy cream, ensuring no lumps form. Cook for another minute until the mixture thickens slightly.
  8. Pour the creamy mixture into the crockpot and stir to combine. Let it cook for an additional 15-20 minutes to blend flavors.
  9. Taste and adjust seasoning if needed. Garnish with fresh thyme or parsley before serving.

Notes

For a thinner soup, add a splash of chicken broth. Use fresh ingredients for the best flavor, and dice potatoes evenly for consistent cooking.
