  • 1 ½ cups (190g) all-purpose flour
  • ¾ cup (170g) cold unsalted butter, cubed
  • ½ cup (100g) granulated sugar
  • ½ cup (100g) brown sugar
  • Pinch of salt
  • ¾ cup (240g) raspberry preserves
  • 1 cup fresh raspberries (or thawed and drained frozen raspberries)
  • 1 cup (175g) chopped dark chocolate or dark chocolate chips
  • 1 teaspoon vanilla extract

Instructions

  1. Preheat your oven to 350°F (175°C) and line a 9×9-inch baking pan with parchment paper, leaving some overhang for easy lifting.
  2. In a large bowl, combine the flour, granulated sugar, brown sugar, and a pinch of salt. Add the cold, cubed butter and cut it into the dry ingredients until the mixture resembles coarse crumbs. Reserve 1 cup of this mixture for the topping.
  3. Firmly press the remaining mixture into the bottom of the prepared pan to form an even layer. Bake for 15 minutes, or until lightly golden. Let it cool slightly.
  4. Spread the raspberry preserves over the partially baked crust. Sprinkle the fresh raspberries evenly over the top.
  5. Sprinkle the chopped dark chocolate or dark chocolate chips over the raspberries.
  6. Crumble the reserved topping mixture evenly over the chocolate layer. Bake for another 25-30 minutes, or until the topping is golden brown and the chocolate has melted.
  7. Let the bars cool completely in the pan before lifting them out using the parchment overhang. Slice into squares or rectangles and serve.

Notes

For clean slices, refrigerate the bars for about 30 minutes before cutting. Cold butter is crucial for the crumbly texture, and spreading the preserves evenly ensures a balanced flavor in every bite.
