- 2 cups (480 ml) heavy cream (at least 35% fat content)
- 2 tablespoons (30 g) powdered sugar
- 1 teaspoon (5 ml) vanilla extract
- Cherries (fresh, jarred, or frozen, drained well)
- 2 tablespoons (30 ml) kirsch (optional)
- 1/2 cup (120 ml) heavy cream (for ganache)
- 4 ounces (115 g) dark chocolate (for ganache)
Instructions
- In a mixing bowl, beat 2 cups of heavy cream with powdered sugar and vanilla extract until stiff peaks form. Set aside.
- If using fresh cherries, pit and slice them. For jarred or frozen cherries, drain thoroughly. Toss with kirsch if desired.
- Spread a thin layer of whipped cream on the bottom of your pan. Arrange a layer of chocolate wafer cookies, slightly overlapping. Add a generous layer of whipped cream and scatter cherries on top. Repeat until ingredients are used, finishing with whipped cream.
- Cover the pan with plastic wrap and refrigerate for at least 6 hours, preferably overnight.
- Heat 1/2 cup of heavy cream until steaming, then pour over chopped dark chocolate. Let sit for 5 minutes, then stir until smooth to make ganache.
- Remove the chilled cake from the pan. Drizzle ganache over the top and garnish with extra cherries and chocolate shavings.
- Slice and serve chilled.
