- 1 1/2 cups (190g) all-purpose flour
- 1/2 cup (115g) cold unsalted butter
- 1/4 cup (50g) granulated sugar
- 1 egg yolk
- 6 oz (170g) dark chocolate
- 1/2 cup (120ml) heavy cream
- 1 lb (450g) fresh strawberries
- 1 tsp vanilla extract
- 2 tbsp (30ml) water
Instructions
- In a mixing bowl, combine 1 1/2 cups (190g) all-purpose flour, 1/2 cup (115g) cold unsalted butter, and 1/4 cup (50g) granulated sugar. Use a pastry cutter or your fingertips to blend until crumbly. Add 1 egg yolk and mix until the dough comes together. Wrap in plastic wrap and chill for 30 minutes.
- Preheat the oven to 375°F (190°C).
- On a floured surface, roll out the dough to fit your 9-inch tart pan. Press it into the pan and trim any excess. Prick the base with a fork and chill for another 15 minutes.
- Line the tart shell with parchment paper and fill with pie weights or dried beans. Bake for 15 minutes, then remove the weights and bake for another 10 minutes until golden. Cool completely.
- Melt 6 oz (170g) dark chocolate with 1/2 cup (120ml) heavy cream using a double boiler or microwave. Stir until smooth and glossy.
- Pour the ganache into the cooled tart shell and smooth it out. Chill for 30 minutes to set.
- Arrange fresh strawberries (about 1 lb or 450g) over the ganache layer. You can slice them or keep them whole for a decorative look.
- Lightly brush the strawberries with a mixture of 2 tbsp (30ml) water and 1 tsp vanilla extract for a shiny finish.
Notes
Keep butter cold for a flaky crust. Chill between layers to ensure clean assembly. Use ripe strawberries for the best flavor. Slice with a sharp knife dipped in warm water for clean cuts.
