- 1 cup raspberry jam
- 1/4 cup water
- 1 1/2 cups (360 ml) heavy cream
- 16 oz (450 g) mascarpone cheese
- 1/2 cup (60 g) powdered sugar
- 1 package ladyfingers
- 2 cups fresh raspberries (or thawed frozen raspberries)
- 1/2 cup (90 g) white chocolate, melted
Instructions
- In a small saucepan, combine 1 cup of raspberry jam with 1/4 cup water. Heat gently until the mixture is smooth and slightly syrupy. Let cool.
- In a chilled bowl, whip 1 1/2 cups (360 ml) of heavy cream until stiff peaks form. Set aside.
- In another bowl, beat 16 oz (450 g) mascarpone cheese with 1/2 cup (60 g) powdered sugar until smooth. Fold in the whipped cream gently to create a light, fluffy mixture.
- Dip each ladyfinger briefly into the raspberry syrup and arrange them in a single layer at the bottom of your dish.
- Spread half of the mascarpone mixture evenly over the ladyfingers.
- Scatter a generous layer of fresh raspberries over the mascarpone cream.
- Add another layer of dipped ladyfingers, the remaining mascarpone cream, and more raspberries.
- Melt 1/2 cup (90 g) of white chocolate and drizzle it over the top layer. Refrigerate for at least 4 hours, preferably overnight.
Notes
For best results, chill the dessert overnight to allow the flavors to meld. Avoid oversoaking the ladyfingers to prevent them from becoming mushy. Adjust the sweetness of the mascarpone mixture to your preference.
