- 1 cup (90g) rolled oats
- 1/2 cup (60g) dried cranberries
- 1/2 cup (70g) chopped almonds
- 1 tablespoon (10g) chia seeds
- 1/2 cup (125g) almond butter
- 1/4 cup (85g) honey
- 1 teaspoon vanilla extract
- Pinch of salt
Instructions
- In a medium mixing bowl, combine rolled oats, dried cranberries, chopped almonds, and chia seeds.
- Add almond butter, honey, and vanilla extract to the dry ingredients.
- Sprinkle in a pinch of salt and stir everything together until fully combined. The mixture should be moist enough to hold together when pressed.
- Using a cookie scoop or tablespoon, scoop out portions of the mixture and roll them into balls with your hands, about 1-inch in diameter.
- Place the energy bites on a parchment-lined baking sheet or plate. Refrigerate for at least 30 minutes to firm up.
- Once chilled, transfer the bites to an airtight container. They’re ready to enjoy!
