- 1 cup (about 30g) fresh cilantro leaves
- 2 garlic cloves, peeled
- 1/4 cup (60g) Greek yogurt
- 2 tablespoons olive oil
- 2 tablespoons freshly squeezed lime juice
- Pinch of salt
- 1 small jalapeño, deseeded and chopped (optional)
Instructions
- Wash and roughly chop the cilantro, peel the garlic cloves, and deseed and chop the jalapeño if using.
- In a blender or food processor, combine cilantro, garlic, Greek yogurt, olive oil, lime juice, and salt.
- Blend on high speed until the sauce is smooth and creamy. Add water, one tablespoon at a time, if the sauce is too thick.
- Taste and adjust the flavors as needed. Add more lime juice for tanginess or more jalapeño for spice.
- Chill the sauce in the refrigerator for at least 15 minutes before serving to allow the flavors to meld together.
Notes
For a milder flavor, use roasted garlic instead of raw. Adjust the consistency by adding more water for a thinner sauce or less olive oil for a thicker texture. This sauce tastes even better the next day as the flavors deepen.
