- 2 tablespoons (30ml) honey (or maple syrup for vegan)
- 2 tablespoons (30ml) extra virgin olive oil
- 2 garlic cloves, minced
- 2 tablespoons fresh parsley, chopped (for garnish)
- Optional: chili flakes, sesame seeds
Instructions
- Preheat oven to 400°F (200°C). Line a large baking sheet with parchment paper.
- Clean mushrooms by wiping with a damp paper towel. Trim stems if needed.
- In a mixing bowl, whisk together soy sauce, honey, olive oil, and minced garlic to create the glaze.
- Add mushrooms to the bowl and toss until evenly coated in the glaze.
- Arrange mushrooms in a single layer on the prepared baking sheet, avoiding overcrowding.
- Roast for 20-25 minutes, tossing halfway through, until mushrooms are golden and slightly caramelized.
- Remove from oven and sprinkle with chopped parsley. Serve warm.

Don’t rinse mushrooms with water—they absorb moisture and become soggy. Avoid overcrowding the baking sheet for even roasting. Watch the glaze carefully to prevent burning. Can be made ahead and reheated in the oven at 375°F for 5-10 minutes.
