These Easy Red Velvet Cheesecake Bites combine the rich flavors of red velvet cake and creamy cheesecake into bite-sized treats, perfect for any occasion.

- 1 box red velvet cake mix
- Eggs (as per cake mix instructions)
- Oil (as per cake mix instructions)
- Water (as per cake mix instructions)
- 8 oz cream cheese, softened
- 1 cup powdered sugar, sifted
- 1 tsp vanilla extract
- Optional decorations: sprinkles, melted chocolate, crushed candy canes
Instructions
- Preheat your oven to 350°F (175°C). Grease your mini muffin tin or line it with paper liners.
- In a large bowl, combine the red velvet boxed cake mix with eggs, oil, and water according to the package directions. Mix until smooth.
- In a separate bowl, beat the cream cheese until smooth and creamy. Add the powdered sugar and vanilla extract, mixing until fully combined.
- Fill each muffin cup about halfway with red velvet batter. Add a dollop of the cheesecake mixture on top (about a teaspoon), then cover with a bit more cake batter until the cups are ¾ full.
- Place the tin in the oven and bake for 12–15 minutes, or until a toothpick inserted into the cake portion comes out clean. The cheesecake filling will stay soft.
- Let the bites cool in the tin for 5 minutes before transferring them to a wire rack to cool completely.
Notes
Let cream cheese soften at room temperature for easier mixing. Use a cookie scoop for even portions. Check bites after 12 minutes to avoid overbaking.
