  • Eggs (as per cake mix instructions)
  • Oil (as per cake mix instructions)
  • Water (as per cake mix instructions)
  • 8 oz cream cheese, softened
  • 1 cup powdered sugar, sifted
  • 1 tsp vanilla extract
  • Optional decorations: sprinkles, melted chocolate, crushed candy canes

Instructions

  1. Preheat your oven to 350°F (175°C). Grease your mini muffin tin or line it with paper liners.
  2. In a large bowl, combine the red velvet boxed cake mix with eggs, oil, and water according to the package directions. Mix until smooth.
  3. In a separate bowl, beat the cream cheese until smooth and creamy. Add the powdered sugar and vanilla extract, mixing until fully combined.
  4. Fill each muffin cup about halfway with red velvet batter. Add a dollop of the cheesecake mixture on top (about a teaspoon), then cover with a bit more cake batter until the cups are ¾ full.
  5. Place the tin in the oven and bake for 12–15 minutes, or until a toothpick inserted into the cake portion comes out clean. The cheesecake filling will stay soft.
  6. Let the bites cool in the tin for 5 minutes before transferring them to a wire rack to cool completely.

Notes
