These quick and delicious Sausage Egg and Cheese Roll-Ups are the perfect portable breakfast! Fluffy scrambled eggs, golden sausage crumbles, and gooey melted cheese all wrapped in a warm tortilla. Perfect for busy mornings or meal prep.

- 8 ounces (225g) breakfast sausage (pork, turkey, or plant-based)
- 6 large eggs
- 2 tablespoons (30ml) milk
- 1 cup shredded cheddar cheese (or cheese of choice)
- 6 soft flour tortillas (8-inch size)
- Salt and pepper to taste
- Optional: diced onions, bell peppers, spinach, or mushrooms
Instructions
- Cook sausage in a nonstick skillet over medium heat, breaking into crumbles. Cook until browned and fully cooked. Remove and set aside.
- In a bowl, whisk eggs with milk, salt, and pepper. Pour into the skillet and cook over medium-low heat, stirring occasionally until just set. Remove from heat.
- Warm tortillas in microwave for 20 seconds or on a dry skillet for a few seconds on each side.
- Lay out each tortilla and sprinkle about 2 tablespoons of cheese on bottom third. Add a portion of cooked sausage and scrambled eggs.
- Optional: Add sautéed vegetables if using.
- Roll tortillas tightly, tucking in sides as you go. Place seam-side down.
- Optional: Toast roll-ups in skillet for 1-2 minutes on each side for extra melty cheese and crispy exterior.
- Serve warm, or wrap for on-the-go breakfast.
Notes
Don’t overcook the eggs—they’ll continue cooking from residual heat. Can be prepped the night before by cooking sausage and eggs separately, then assembling in the morning. Store wrapped roll-ups in fridge for up to 3 days or freeze for up to 2 months.
