Instructions

Skim the top frequently and strain the broth through a fine-mesh strainer lined with cheesecloth for ultimate clarity. Chill the consommé to allow any remaining fat to solidify, then skim it off.
  2. Measure the Gelatin: For every 2 cups (480 ml) of consommé, use 2 tablespoons (about 28 grams) of unflavored gelatin powder. Adjust based on the firmness you prefer.
  3. Bloom the Gelatin: Sprinkle the gelatin over 1/4 cup (60 ml) of cold consommé in a mixing bowl. Let it sit for 5 minutes to bloom—it should look slightly thickened.
  4. Heat the Consommé: In a small saucepan, gently warm the remaining consommé over low heat. Do not let it boil, as this can affect the clarity and flavor.
  5. Combine Gelatin and Consommé: Gradually whisk the bloomed gelatin into the warm consommé until completely dissolved and smooth.
  6. Season and Adjust: Taste the mixture and adjust with a pinch of salt, white pepper, or a few drops of lemon juice if necessary.
  7. Pour Into Mold: Carefully pour the mixture into your silicone cube mold or prepared dish. Smooth the surface if needed.
  8. Chill Until Set: Refrigerate for at least 4 hours, or until the gelatin is firm and holds its shape.
  9. Unmold and Serve: Gently remove the cubes from the mold and arrange them on a serving platter. Garnish with fresh herbs or microgreens for a pop of color.
