- 1 cup granulated sugar
- 1 egg
- 1 teaspoon vanilla extract
- 1 teaspoon peppermint extract
- 2 1/2 cups all-purpose flour
- 1 teaspoon baking powder

- 1/2 cup crushed peppermint candies
- Red food coloring (optional)
Instructions
- Preheat the oven to 350°F (175°C). Line baking sheets with parchment paper or silicone mats.
- In a large bowl, beat the softened butter and granulated sugar together until light and fluffy (about 2-3 minutes).
- Add the egg, vanilla extract, and peppermint extract to the bowl. Beat until fully incorporated.
- In a separate bowl, whisk together the flour, baking powder, and salt.
- Gradually add the dry ingredients to the wet ingredients, mixing until a soft dough forms. If desired, divide the dough in half and color one portion with red food coloring.
- Wrap the dough in plastic wrap and refrigerate for 30 minutes.
- On a lightly floured surface, roll out the dough to about 1/4-inch thickness. Use cookie cutters to create festive shapes.
- Press crushed peppermint candies gently onto the surface of each cookie before baking.
- Place cookies on the prepared baking sheets and bake for 10-12 minutes, or until the edges are lightly golden.
- Allow cookies to cool on the baking sheets for 5 minutes before transferring them to a wire rack to cool completely.
