  • 1/2 cup crumbled feta cheese
  • 1/4 cup hot honey
  • 2 cloves garlic, minced
  • 2 tablespoons olive oil
  • Juice of half a lemon
  • 1 tablespoon soy sauce
  • 1 teaspoon ground paprika
  • Salt and pepper to taste
  • Fresh parsley, chopped (optional)

Instructions

  1. Prepare the marinade: In a mixing bowl, combine 2 tablespoons olive oil, 1 tablespoon soy sauce, juice of half a lemon, 2 cloves garlic (minced), 1 teaspoon paprika, and a pinch of salt and pepper. Mix well.
  2. Marinate the chicken: Place the chicken breasts in the bowl and coat them evenly with the marinade. Cover and let sit for at least 15 minutes—ideally up to an hour for better flavor.
  3. Cook the chicken: Heat 2 tablespoons olive oil in a large skillet over medium heat. Add the chicken breasts and cook for about 4–5 minutes per side, or until golden brown and cooked through. The internal temperature should reach 165°F (75°C).
  4. Add the feta: Once the chicken is cooked, reduce the heat to low and sprinkle crumbled feta over the top of each piece. Cover the skillet with a lid and cook for 1–2 minutes, just until the feta starts to soften.
  5. Drizzle with hot honey: Remove the skillet from heat and drizzle hot honey generously over the chicken and feta.
  6. Serve: Garnish with chopped parsley if desired and serve immediately alongside your favorite sides, such as rice, roasted veggies, or a fresh salad.
