Instructions
- Preheat your oven to 375°F (190°C) and lightly grease a mini muffin tin with non-stick spray or butter.
- In a large mixing bowl, whisk together 1 cup (120g) all-purpose flour, 1 tsp baking powder, 1/4 tsp salt, and 2 tbsp granulated sugar.
- In a separate bowl, whisk together 1 cup (240ml) milk, 1 large egg, 2 tbsp melted unsalted butter, and 1 tsp vanilla extract.
- Slowly pour the wet ingredients into the dry ingredients, whisking until just combined. Do not overmix; the batter should be slightly lumpy.
- Fold in your favorite additions like chocolate chips or blueberries if desired.
- Spoon the batter into the mini muffin cups, filling each about 3/4 full.
- Place the tin in the preheated oven and bake for 10-12 minutes, or until the poppers are golden and a toothpick inserted comes out clean.
