  • Author: David
  • Total Time: 22 minutes
  • Yield: 24 poppers 1x

Description

These fluffy bite-sized pancake poppers are perfect for breakfast, brunch, or as a fun snack. They are quick, easy to make, and endlessly customizable to suit everyone’s taste buds.

Ingredients

Scale
  • 1 cup (120g) all-purpose flour
  • 1 tsp baking powder
  • 1/4 tsp salt
  • 2 tbsp granulated sugar
  • 1 cup (240ml) milk
  • 1 large egg
  • 2 tbsp melted unsalted butter
  • 1 tsp vanilla extract
  • Optional add-ins: chocolate chips, blueberries, chopped nuts, or bacon bits

Instructions

  1. Preheat your oven to 375°F (190°C) and lightly grease a mini muffin tin with non-stick spray or butter.
  2. In a large mixing bowl, whisk together 1 cup (120g) all-purpose flour, 1 tsp baking powder, 1/4 tsp salt, and 2 tbsp granulated sugar.
  3. In a separate bowl, whisk together 1 cup (240ml) milk, 1 large egg, 2 tbsp melted unsalted butter, and 1 tsp vanilla extract.
  4. Slowly pour the wet ingredients into the dry ingredients, whisking until just combined. Do not overmix; the batter should be slightly lumpy.
  5. Fold in your favorite additions like chocolate chips or blueberries if desired.
  6. Spoon the batter into the mini muffin cups, filling each about 3/4 full.
  7. Place the tin in the preheated oven and bake for 10-12 minutes, or until the poppers are golden and a toothpick inserted comes out clean.
  8. Let the poppers cool for 5 minutes before removing them from the tin. Serve warm with syrup, fruit, or your favorite dipping sauce.

Notes

[‘Don’t overmix the batter to keep the poppers fluffy.’, ‘Grease the mini muffin tin generously to prevent sticking.’, ‘Keep a close eye on the baking time to avoid overbaking.’, ‘Customize the flavor with spices, citrus zest, or different fillings.’, ‘Use a small cookie scoop for even portioning.’]
