  • 2 boneless, skinless chicken breasts
  • 1/2 cup all-purpose flour (or gluten-free flour)
  • 2 tablespoons olive oil
  • 2 tablespoons unsalted butter
  • 1/2 cup chicken broth (low-sodium preferred)
  • 1/4 cup fresh lemon juice
  • 2 tablespoons capers, rinsed
  • 2 cloves garlic, finely minced
  • 2 tablespoons fresh parsley, chopped
  • Salt and pepper to taste

Instructions

  1. Place the chicken breasts between two pieces of plastic wrap and pound them to an even thickness of about ½ inch.
  2. Season both sides of the chicken generously with salt and pepper. Dredge each piece in flour, shaking off any excess.
  3. Heat 2 tablespoons of olive oil in a large skillet over medium-high heat. Once the oil is shimmering, add the chicken and cook for 3-4 minutes per side or until golden brown and cooked through. Transfer the chicken to a plate and set aside.
  4. Reduce the heat to medium and add 2 tablespoons of butter to the skillet. Once melted, stir in the minced garlic and cook for 30 seconds until fragrant.
  5. Pour in the chicken broth and fresh lemon juice, scraping up any browned bits from the bottom of the skillet. Bring the mixture to a simmer.
  6. Add the capers to the sauce and continue simmering for 2-3 minutes to let the flavors meld together.
  7. Return the chicken to the skillet, spooning the sauce over the top. Cook for another 2 minutes to reheat the chicken and let it soak up the sauce.
  8. Transfer the chicken piccata to a serving platter and garnish with freshly chopped parsley. Serve immediately with your favorite sides.

Notes

For best results, use freshly squeezed lemon juice and rinse capers if packed in salt. Avoid overcrowding the skillet to ensure even cooking.
