  • 1.5 lbs Brussels sprouts, trimmed and halved
  • 3 tablespoons olive oil

  • Optional: 1/4 teaspoon red pepper flakes

Instructions

  1. Preheat oven to 425°F (220°C). Line a large baking sheet with parchment paper or a silicone mat.
  2. Trim stem ends from Brussels sprouts, remove yellow or loose leaves, and halve each sprout lengthwise. Quarter large sprouts for even cooking.
  3. In a large mixing bowl, combine olive oil and minced garlic. Stir in salt and black pepper.
  4. Add Brussels sprouts to the bowl and toss thoroughly to coat. Let sit for 5 minutes to infuse flavor.
  5. Spread sprouts in a single layer, cut-side down, on the prepared baking sheet. Do not overcrowd.
  6. Roast for 20 minutes, flipping sprouts halfway through.
  7. Remove from oven, sprinkle grated parmesan evenly over the sprouts, and return to oven for 3-5 minutes until cheese melts and crisps.
