Description

Tender bites of cinnamon-spiced apples encased in soft dough, fried to golden perfection, and topped with a rich pecan caramel drizzle. Perfect for cozy mornings or holiday gatherings.


Ingredients

  • 2 cups (250g) all-purpose flour
  • 2 teaspoons baking powder
  • 1 teaspoon ground cinnamon
  • 1/4 cup (50g) granulated sugar
  • 2 eggs
  • 1 cup (240ml) milk (whole milk or dairy-free alternative)
  • 2 cups diced apples (Granny Smith, Honeycrisp, or Fuji)
  • 1 cup (120g) powdered sugar
  • 23 tablespoons (30-45ml) milk (for glaze)
  • 1/2 cup (120ml) caramel sauce
  • 1/4 cup (30g) finely chopped toasted pecans
  • Neutral oil for frying (vegetable or canola oil)

Instructions

  1. Peel and dice the apples into small chunks. Toss them with a teaspoon of cinnamon and set aside.
  2. In a large bowl, whisk together 2 cups (250g) of flour, 2 teaspoons of baking powder, 1 teaspoon of cinnamon, and 1/4 cup (50g) of sugar.
  3. In a separate bowl, whisk 2 eggs and 1 cup (240ml) of milk. Gradually add the wet mix to the dry mix, stirring gently until just combined.
  4. Fold the diced apples into the batter. Be careful not to overmix.
  5. Pour about 2 inches of oil into a heavy-bottomed skillet or pot. Heat to 350°F (175°C).
  6. Drop spoonfuls of batter into the hot oil. Fry for 2-3 minutes per side or until golden brown. Remove with a slotted spoon and place them on a cooling rack lined with paper towels.
  7. In a small bowl, mix 1 cup (120g) of powdered sugar with 2-3 tablespoons (30-45ml) of milk until smooth to make the glaze.
  8. Warm 1/2 cup (120ml) of caramel sauce and stir in 1/4 cup (30g) of finely chopped toasted pecans to prepare the pecan caramel swirl.
  9. Drizzle the glaze over the cooled fritters and swirl the pecan caramel on top using a spoon or piping bag.

Notes

Maintain oil temperature at 350°F (175°C) for even frying. Fry in small batches to prevent overcrowding. Test one fritter first to check seasoning.
