Ingredients
Scale
- 2 cups (250g) all-purpose flour
- 2 teaspoons baking powder
- 1 teaspoon ground cinnamon
- 1/4 cup (50g) granulated sugar
- 2 eggs
- 1 cup (240ml) milk (whole milk or dairy-free alternative)
- 2 cups diced apples (Granny Smith, Honeycrisp, or Fuji)
- 1 cup (120g) powdered sugar
- 2–3 tablespoons (30-45ml) milk (for glaze)
- 1/2 cup (120ml) caramel sauce
- 1/4 cup (30g) finely chopped toasted pecans
- Neutral oil for frying (vegetable or canola oil)
Instructions
- Peel and dice the apples into small chunks. Toss them with a teaspoon of cinnamon and set aside.
- In a large bowl, whisk together 2 cups (250g) of flour, 2 teaspoons of baking powder, 1 teaspoon of cinnamon, and 1/4 cup (50g) of sugar.
- In a separate bowl, whisk 2 eggs and 1 cup (240ml) of milk. Gradually add the wet mix to the dry mix, stirring gently until just combined.
- Fold the diced apples into the batter. Be careful not to overmix.
- Pour about 2 inches of oil into a heavy-bottomed skillet or pot. Heat to 350°F (175°C).
- Drop spoonfuls of batter into the hot oil. Fry for 2-3 minutes per side or until golden brown. Remove with a slotted spoon and place them on a cooling rack lined with paper towels.
- In a small bowl, mix 1 cup (120g) of powdered sugar with 2-3 tablespoons (30-45ml) of milk until smooth to make the glaze.
- Warm 1/2 cup (120ml) of caramel sauce and stir in 1/4 cup (30g) of finely chopped toasted pecans to prepare the pecan caramel swirl.
- Drizzle the glaze over the cooled fritters and swirl the pecan caramel on top using a spoon or piping bag.
Notes
Maintain oil temperature at 350°F (175°C) for even frying. Fry in small batches to prevent overcrowding. Test one fritter first to check seasoning.
