These healthy air fryer churro bites are a quick, easy, and guilt-free snack with a crispy cinnamon-sugar coating and a soft, fluffy inside. Made with Greek yogurt and whole wheat flour, they’re ready in just 20 minutes and perfect for satisfying sweet cravings without the extra oil.
Ingredients
- 1 cup (120g) whole wheat flour (or all-purpose flour or 1:1 gluten-free blend)
- 1/2 cup (120g) plain Greek yogurt (full-fat or low-fat)
- 2 tablespoons (30ml) unsweetened applesauce
- 2 tablespoons (30g) coconut sugar or brown sugar
- 1 teaspoon baking powder
- 1/4 teaspoon fine sea salt
- 1/2 teaspoon pure vanilla extract
- 2 tablespoons (24g) coconut sugar or brown sugar (for coating)
- 1 teaspoon ground cinnamon (for coating)
- 1 teaspoon melted coconut oil or unsalted butter (for brushing)
Instructions
- Line the air fryer basket with parchment paper or lightly spray with nonstick spray. Preheat to 350°F (175°C) if required.
- In a mixing bowl, whisk together whole wheat flour, 2 tablespoons coconut sugar, baking powder, and salt until no lumps remain.
- Stir in Greek yogurt, applesauce, and vanilla extract. Mix gently until just combined; do not overmix.
- Use a small cookie scoop or teaspoon to portion dough into 1-inch pieces. Roll gently between palms to form balls. If sticky, lightly wet your hands.
- Arrange dough balls in the air fryer basket, leaving space between each. Cook in batches if needed.
- Air fry at 350°F (175°C) for 8-10 minutes, flipping halfway, until golden brown and puffed. Add 2 more minutes if needed for color.
- While bites cook, combine 2 tablespoons coconut sugar and 1 teaspoon cinnamon in a shallow bowl. Melt 1 teaspoon coconut oil or butter.
- Brush warm churro bites with melted oil or butter, then roll in cinnamon-sugar mixture until evenly coated.
- Let cool for 2-3 minutes before serving.
Notes
For gluten-free bites, use a 1:1 gluten-free flour blend. For dairy-free, use coconut or almond yogurt. Do not overmix the dough for best texture. Coat bites while warm for best cinnamon-sugar adhesion. Store leftovers in an airtight container for up to 1 day at room temperature or 3 days in the fridge; reheat in air fryer to restore crispness. Freeze up to 1 month.
