  • 2 tablespoons pumpkin puree
  • 1 teaspoon pumpkin pie spice
  • 2 tablespoons brown sugar (or maple syrup for refined sugar-free)
  • 1 teaspoon vanilla extract
  • 1 shot espresso (about 30 ml) or 1/2 cup strong brewed coffee (120 ml)
  • Whipped cream (optional, for topping)
  • Cinnamon or nutmeg (optional, for garnish)

Instructions

  1. In a small saucepan, combine 2 tablespoons of pumpkin puree, 1 teaspoon of pumpkin pie spice, and 2 tablespoons of brown sugar (or maple syrup). Cook over medium heat, stirring constantly, until the mixture is fragrant and slightly thickened (about 2 minutes).
  2. Slowly stir in 1 cup of milk. Heat gently, whisking frequently, until the milk is steaming but not boiling. Remove from heat and stir in 1 teaspoon of vanilla extract.
  3. Prepare 1 shot of espresso or 1/2 cup of strong brewed coffee. Pour the coffee into your favorite mug.
  4. Pour the warm pumpkin milk mixture over the coffee. If using a milk frother, froth the mixture for extra foam.
  5. Top with whipped cream if desired and sprinkle a pinch of pumpkin pie spice or cinnamon on top.

Notes

Adjust sweetness to taste by starting with less sugar and adding more if needed. The pumpkin mixture can be prepared in advance and stored in the fridge for up to 3 days. For a dairy-free version, use almond, coconut, or oat milk.
