- 1/2 cup honey (raw or high-quality)
- 1 cup sliced almonds (toasted)
- 1 cup all-purpose flour (or 1:1 gluten-free flour blend)
- 1/2 cup brown sugar (or coconut sugar)
- 1/2 cup unsalted butter (melted, or coconut oil for dairy-free)
- 1 large egg (or flax egg for vegan)
- 1 teaspoon vanilla extract
- 1/4 teaspoon salt
Instructions
- Preheat your oven to 350°F (175°C) and line a 9×13-inch baking dish with parchment paper.
- Spread the sliced almonds on a baking sheet and toast for 5-7 minutes until fragrant. Let them cool.
- In a medium bowl, whisk together the flour, brown sugar, and salt.
- In another bowl, whisk the melted butter, honey, egg, and vanilla extract until smooth.
- Gradually fold the dry ingredients into the wet mixture using a spatula. Stir until just combined, then fold in the toasted almonds.
- Pour the batter into the prepared baking dish and spread it evenly.
- Bake for 20-25 minutes, or until the edges are golden and a toothpick inserted in the center comes out clean.
- Allow the bars to cool completely in the pan before lifting them out and slicing into squares or rectangles.
Notes
Refrigerate the bars for 30 minutes before cutting if they seem too crumbly. Toasting the almonds enhances their flavor and crunch.
