Ingredients

  • 4 cups (480 grams) all-purpose flour
  • 2 teaspoons instant yeast
  • 2 teaspoons salt
  • 1 ¾ cups (420 ml) warm water
  • 2 tablespoons (30 ml) olive oil
  • 1 bulb garlic
  • ½ cup (120 ml) honey
  • 1 tablespoon chili flakes
  • Freshly grated Parmesan cheese
  • Flaky salt

Instructions

  1. In a large mixing bowl, combine 4 cups of all-purpose flour, 2 teaspoons of instant yeast, and 2 teaspoons of salt. Gradually mix in 1 ¾ cups of warm water and 2 tablespoons of olive oil. Knead until smooth, about 5 minutes.
  2. Cover the bowl with a damp kitchen towel and let the dough rise for 1-2 hours, or until doubled in size.
  3. While the dough is rising, roast a whole bulb of garlic. Slice off the top, drizzle with olive oil, wrap in foil, and bake at 400°F (200°C) for 30 minutes.
  4. Grease your baking pan with olive oil, then transfer the dough to the pan. Spread it out evenly and press your fingers into the dough to create dimples.
  5. In a small saucepan, combine ½ cup of honey and 1 tablespoon of chili flakes. Heat gently and let it infuse while the dough rests.
  6. Drizzle olive oil over the dough, sprinkle with roasted garlic cloves, Parmesan cheese, and flaky salt. Bake at 425°F (220°C) for 20-25 minutes, or until golden brown.
  7. Once out of the oven, drizzle the hot honey generously over the focaccia. Let cool for 10 minutes before serving.

Notes

Pressing your fingers into the dough creates pockets for the olive oil and toppings to settle into, enhancing the flavor. Adjust the spice level of the hot honey to your liking. If your kitchen is cold, let the dough rise in a warm spot.
