- 1 cup (226g) unsalted butter, softened
- 1 cup (200g) brown sugar
- 1/2 cup (100g) granulated sugar
- 2 large eggs, room temperature
- 2 teaspoons vanilla extract
- 2 1/2 cups (310g) all-purpose flour
- 1 teaspoon baking soda
- 1/2 teaspoon salt
- 1 cup (170g) butterscotch chips
- 1/2 cup (85g) toffee bits
Instructions
- Preheat the oven to 350°F (175°C). Line a 9×13 pan with parchment paper or grease it well.
- In a large bowl, cream the softened butter with brown sugar and granulated sugar until fluffy (about 2-3 minutes).
- Add the eggs and vanilla extract, mixing until combined.
- In another bowl, whisk together the flour, baking soda, and salt.
- Gradually add the dry ingredients to the wet mixture, mixing just until combined. Avoid overmixing.
- Stir in the butterscotch chips and toffee bits. The batter will be thick.
- Transfer the batter to the prepared pan, spreading it evenly.
- Bake for 25-30 minutes, or until the edges are golden and a toothpick inserted in the center comes out with just a few crumbs.
- Let the bars cool completely in the pan before lifting them out and slicing with a sharp knife.

Don’t overmix the dough to avoid tough bars. Let the bars cool completely before slicing for clean cuts. For a fun twist, try adding a sprinkle of flaky sea salt on top.
