  • 1 cup (230 g) unsalted butter, softened
  • 1/2 cup (60 g) powdered sugar (for the cookies)
  • 2 cups (250 g) all-purpose flour
  • Pinch of salt

Instructions

  1. Prepare the Filling: In a large bowl, combine ricotta cheese, mascarpone cheese, powdered sugar, vanilla extract, and orange zest. Mix until smooth, then fold in mini chocolate chips. Cover and refrigerate for at least 30 minutes.
  2. Make the Cookie Dough: Beat softened butter with powdered sugar until creamy. Gradually add all-purpose flour and a pinch of salt. Mix until the dough comes together.
  3. Chill the Dough: Wrap the dough in plastic wrap and refrigerate for 20-30 minutes.
  4. Roll and Cut: Preheat your oven to 350°F (175°C). Roll out the dough to about 1/4-inch thickness on a floured surface. Use a cookie cutter to cut out shapes and place them on lined baking sheets.
