- 12 ounces cheese tortellini (fresh or frozen)
- 2 cups cooked chicken (rotisserie or leftover grilled/baked chicken)
- 2 cups broccoli florets (fresh or frozen)
- 1 cup heavy cream
- 2 cloves garlic, minced
- 2 tablespoons unsalted butter
- 1/2 cup freshly grated parmesan cheese
- Salt and pepper to taste
- 1 tablespoon olive oil
Instructions
- Bring a large pot of salted water to a boil. Add the tortellini and cook according to package instructions, usually 3-5 minutes. In the last 2 minutes of boiling, toss in the broccoli florets. Drain and set aside.
- In a large skillet, heat 1 tablespoon of olive oil over medium heat. Add the minced garlic and sauté for 1-2 minutes until fragrant.
- Stir in the cooked chicken and cook for another 2-3 minutes, allowing it to warm through.
- Reduce the heat to low and add the butter. Once melted, pour in the heavy cream and stir well. Let it simmer for 3-4 minutes to thicken slightly.
- Gradually sprinkle in the parmesan cheese, stirring continuously until the sauce becomes smooth and creamy. Season with salt and pepper to taste.
- Add the cooked tortellini and broccoli to the skillet. Gently toss everything together, ensuring the sauce coats every bite.
- Transfer to plates or a serving dish, and garnish with extra parmesan cheese or fresh parsley if desired.
Notes
Save pasta water to adjust sauce consistency if needed. Use freshly grated parmesan for the best flavor. Add red pepper flakes for a spicy kick.
